YES!! Green Pizza Crust

Michelle found this recipe in one of the latest Dillon’s and I have to admit, I had my concern. We always preach cooking fearlessly, but Spinach Crust Pizza? Okay, let’s do this.
Okay, this "Faux Dough" crust is so much better than it's more popular older brother Cauliflower crust pizza. Better in every category: Flavor, color, flavor...did we mention flavor. It's fun to make so get the kids involved.
2 pkgs. of 10 oz frozen spinach-defrosted
1/4 cup chickpea flour *(Regular AP flour works fine too if you're not concerned about the gluten)
1/2 cup shredded Mozzarella cheese
2 large eggs, lightly beaten
1/4 tsp. salt
1/4 tsp garlic powder
Desired toppings *(Whatever you like on your pizza)
Preheat oven to 400 degrees Fahrenheit
Place spinach in a clean tea towel and wring out the water. Get as much of the water out of the spinach as possible. The less water, the better the crust
In a bowl, combine spinach, flour, cheese, eggs, salt and garlic powder
Place parchment paper on a cookie sheet and spread a thin, 10 inch circle and bake until firm and edges are crisp (about 30 minutes).
Add desired pizza toppings and return pizza to oven until toppings are hot and melty. (about another 10-12 minutes)
IF there are leftovers, put them in the fridge. Spinach crust pizza is just as good left over as regular pizza..even cold
